Todd Applebaum of Roaming Acres Farm does a phenomenal job at raising his Berkshire Pigs on Pasture out in Lafayette NJ. All the feed is mixed on the farm so there’s no BS in there. The Pork Standing Rib roast is coming from the loin section. We remove all bones except the rib and truss it with string to stand up. The thin layer of fat is left on to render during the roast, this leaves you with a nice crunchy bit on the outside and great drippings in the pan.

Sizing starts at 3 Bones and incrementally increases to Six Bones. On average each bone weighs 1 lbs.
