We trim our 30-40 day aged standing rib roast to be boneless except for the rib. On average each rib is two inches and weights approximately 2.5 pounds. Our portioning starts at two rib bones, and incrementally increases per rib bone -up to six bones. Be aware we do work with animals that vary in size this affects the final weight and there may be fluctuations of 1/2 pound on either side.

Price per pound is $38. The deposit will be applied to the total at pickup.
